Peanut Butter Jelly Time

Peanut butter and jelly bars with pretzel crust

 

Pretzel Crust

1/2 cup unsalted butter soften
3/4 cup powdered sugar
1 1/2 cup crushed pretzels
1 1/2 cup flour
1 egg

 

Preheat the oven to 350 degrees. Prepare a 9 x 13 pan with foil and cooking spray. In a large bowl beat together the butter, powdered sugar and half the crushed pretzels until it’s creamy. Mix in the flour, egg and remaining pretzels making sure to leave some pretzel pieces intact for some crunch. Press into the prepared pan and bake for twenty minutes, or until the edges begin to brown.

 

Peanut Butter Filling 

1 cup unsalted butter softened
1 cup creamy peanut butter
1 cup chunky peanut butter
1¾ cups powdered sugar
½ teaspoon vanilla extract

1/2 cup strawberry jam

 

While the crust cooks, in a bowl beat the butter until it is completely smooth. Add the peanut butter and beat until combined. Add the powdered sugar and vanilla and beat until very light in color, smooth and fluffy.

Spread the peanut butter mixture over the pretzel crust. It’s okay if it melts slightly, since you will cook it shortly. Place small dollops of jam on top of peanut butter about one inch apart form each other. Marble the mixture by running a knife through the center of the dollop horizontally and then vertically.

Bake for twenty minutes until the corners of the peanut butter turn slightly brown. Put it in the freezer until it cools and sets, about an hour. Slice and serve! Keep left overs in the fridge due to summer heat!
