Pumpkin Cream Pie

With Hurricane Sandy canceling two days of school this week (without ever losing power) I have had plenty of time to do some fall baking this week. I definitely over estimated the amount of room people would save for dessert, especially with spiked cider filling their stomachs. Thus, I had plenty of pumpkin pie dip left over after my dinner party, with very few squirrel chips.

Naturally I wanted to make something different and settled on a pumpkin cream pie with Oreo crust. Chocolate and pumpkin are a match made in heaven and nothing beats an Oreo crust.

So I ground a package of Oreos in my magic bullet (kind of a long process because that thing is pretty damn small). And whipped up a small carton of whipping cream with 1/4 cup of powdered sugar. I folded the whipping cream into the pumpkin pie dip and poured it all over the Oreo crust. Then I decided to get a little bit fancy with it and swirled in some cinnamon.

This dessert is pretty heavenly, and great for people who don’t love pumpkin pie, because the flavor is a lot less dense. Definitely consider adding it to your fall baking list!

Also I hope you all have a great Halloween today! And I hope for the sake of the kids in your neighborhood that you aren’t one of the houses handing out boxes of raisins or pretzels… If you are having trouble deciding what to give out I’d recommend king size candy bars.

Halloween Party!

We started halloweek early with a festive themed dinner party! I made chicken noodle soup and biscuits for dinner; funfetti pumpkin seeds and spiced pumpkin seeds to munch on; and squirrel cinnamon tortilla chips with pumpkin chips for dessert. All washed down with warm cider. And luckily I have enough left over to get me through Hurricane Sandy. Getting in the Halloween Spirit

This weekend we rented a car and drove to Cox Farms in Virginia. This is the ultimate fall paradise complete with hay rides, apple cider and endless pumpkin pies. I would highly recommend going with kids because most of the playgrounds and activities you have to be about a foot tall to get in to. Despite our height, we really proved to have the maturity level of children because we laughed at the name Cox Farms for way too long. Oh well Halloween is all about getting in touch with your inner child right?

Fall in Denver

Fall has somehow skipped DC this year. Foggy Bottom is pretty much the same industrial grey instead of the orange, red and yellow that I’m used to. That’s why I had to fly back to Denver to get a real October 🙂 So maybe mid October, just when the leaves have all turned and are beginning to fall, DC is not the very best place to be. But don’t worry this doesn’t deserve a blog name change, DC the place to be (except in mid October) doesn’t have a ring to it. Really go to Denver if you have a chance. Nothing beats the thin, crisp air and changing Aspen trees.

White Chocolate and Cinnamon Chip Cookies

My absolute favorite cookies with a dash of cinnamon, white chocolate chips and cinnamon chips. So perfect for fall, and shamelessly addicting. Served with a glass of hot apple cider they would make for the perfect autumn dinner party dessert.

Gooey Biscoff Brown Sugar Bars

I have been desperate to try baking with Biscoff since it seems like it is the new “in” dessert fad. These bars did not disappoint with their salty shortbread crust and gooey brown sugar topping. They have the texture of lemon squares since the top is crispy hiding an oozing center. But they have the delicious flavor of cinnamon Biscoff cookies. Find the recipe here and jump on the cookie butter band wagon! A breakfast spread sweeter than Nutella and peanut butter… and made of crushed cookies? You really can’t deny how good that sounds.

The Little Things

Such a chaotic couple of weeks, but filled with so many great events. Here are some of the little things.

 

 

Mid week date at Auntie Anne’s. We go all out for the sake of romance.

 

Roommates birthday party! I made her favorite slutty brownies instead of a birthday cake. What more could you ask for on your 21st?

 

Family date night with my adorable/ fashionable family!

 

Trip to Pentagon City Mall for… the world class food court. Taco Bell and Panda Express right next to each other.. it’s like something out of a fairy tale.

 

And the best day of the year… BID DAY! I couldn’t be happier with our new Alpha Phis and with our successful recruitment.
